I have two kids, both boys. One seems offended by the idea of mealtime as a general concept. The only exceptions that make him perk up at the table are 1) Swiss chard pancakes; 2) mac and cheese; or 3) dal and rice. No carb-fanatic stereotypes happening there, clearly.
Out of curiosity, is that son mildly autistic? My son is, and he, like many autistic kids, loves/loved bland-colored foods, especially mac and cheese, often with garlic bread on the side.
My son only really started eating dark green leaf salads, chillies and certain sauces when his mother and I separated, because those are foods that I would prominantly eat.
Sorry for the digression, but that comment resonated with me for obvious reasons.
