I'd always assumed that the idea of feeling younger (and often people seem to feel somewhere in the 18-25 range) is because that's when the last lot of synaptic pruning occurs.

I am certain that's why a lot of our tastes tend to end up stopping -- or being defined -- about there (which is to say, you'll probably love the music you loved whilst 18-25 forever, and any new music you find will probably be in some way related).
